This year in honor of Earth Day here at Summit Park, we are hosting a 4 course Vegan Dinner to show that a vegan diet can also be gourmet prepared.


First Course:
Wild Mushroom Tamale with Cilantro Pistou and Corn Salsa

Second Course:
Vegan Butternut Squash Ravioli with Roast Vegetables and San Marzano Tomato Sauce

Third Course:
BBQ Jackfruit Sandwich with Avocado Slaw

Fourth Course:
Trio of Sorbets (Strawberry Black Pepper, Coconut Carrot, Cilantro Lime) with Quince Soup and Dried Apples
